Camp Recipe: Granola and Sweet Georgia Muffins

Camp Granola

Makes enough for a family

Ingredients:

  • 42 ounces old-fashioned rolled oats
  • 1⁄2 cup sesame seeds
  • 2 teaspoon sea salt
  • 1⁄2 cup cinnamon
  • 2 teaspoon ground ginger
  • 1 1⁄4 cups soybean oil
  • 1 tablespoon pure vanilla extract
  • 2 cups pure maple syrup
  • 1⁄2 cup molasses
  • 1⁄4 cup water, as needed
  • Dried Fruits (raisins, banana chips, craisins, dried cherries, dried apricots)
  1. Preheat oven to 350. Place a sheet of parchment paper onto a large sheet pan.
  2. Mix dry ingredients in a large bowl. Add liquid ingredients, adding water last and only to moisten the oatmeal.
  3. Spread mixture in an even, loose, 1/2-inch thick layer on the sheet pan. Bake for 20 minutes.
  4. Using a spatula and maybe knife, loosen up the granola by chopping at it and stir it a little on the sheet pan. Bake for 5-8 more minutes. Keep an eye on it to make sure it doesn’t burn.
  5. Cool completely. Chop up into bite-sized pieces and mix in whatever dried fruit you like!

Sweet Georgia Muffins

Ingredients:

  • 1 1⁄2 cups sugar
  • 3⁄4 cups vegetable oil
  • 2 eggs
  • 29 ounces canned yams, drained and 1/2 cup liquid reserved
  • 2 1⁄2 cups four
  • 1⁄2 teaspoon salt
  • 1 1⁄4 teaspoons baking soda
  • 1⁄2 teaspoon baking powder
  • 1⁄2 teaspoon allspice
  • 1 1⁄4 teaspoons cinnamon
  • 3⁄4 teaspoon nutmeg
  1. Preheat the oven to 350 degrees. Grease a 9x13 baking dish.
  2. In a large bowl, beat together sugar, oil, and eggs.
  3. Drain yams and reserve 1/2 cup of liquid. Add yams and beat until well blended. Then beat in reserved liquid.
  4. Combine dry ingredients and add to sweet potato mixture. Fold into batter until just blended. Do not over mix!
  5. Pour into greased pan and bake at 350 degrees for 30-40 minutes or until a toothpick inserted comes out mostly clean (one or two crumbs is okay!) Let cool mostly before slicing and serving.
