Cooking with Solveig: Raspberry Bars

Our cooking guru, Solveig, is back today with a dynamite recipe that is sure to be a crowd pleaser! While we can’t make these bars at camp (those nuts!), you won’t regret making them for a dinner party or holiday coming up.

Raspberry Bars

(makes 2 dozen bars)

Ingredients -

  • 1 1/4 cups plus 2 tablespoons flour, divided
  • ½ cup granulated sugar
  • ½ cup butter
  • 1/3 cup raspberry jam
  • 2 eggs
  • ½ cup packed brown sugar
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1 cup chopped walnuts

Combine 1 ¼ cups flour with granulated sugar in medium bowl. With pastry knife, cut butter into dry ingredients until mix looks like dry oatmeal. Press into lightly greased 9x9 pan. Bake @ 350 20 minutes until edges are light golden brown.

Remove from oven and spread jam over shortbread. In medium bowl, beat eggs, brown sugar, and vanilla until creamy. In a small bowl, combine 2 T flour, salt, and soda. Add to egg mixture and blend. Stir in walnuts and spoon mixture over jam, spreading lightly to corners of pan.

Bake at 350 20-25 minutes more until top is set. Cool in pan before cutting bars.
