Camp Recipe: Cheesy Chicken

It’s no secret that we have the BEST food at camp, so why not try whipping up some camp favorites at home? This fall we’ll be sharing some of our favorite Greystone recipes.

Cheesy Chicken!

There’s always a few squeals when this crowd pleaser is announced in the Dining Hall, and for good reason! It’s cheesy, warm, and comforting - exactly the kind of lunch you want before a long Sunday rest hour. It’s also really easy to put together, so why not try making it for your family today?

Cheesy Chicken (serves 8)

  • 1.5 lbs of chicken, cooked and cut up
  • 1 lb cream cheese
  • 1.5 cup milk
  • 5 oz monterey jack
  • dash of salt
  • touch of garlic powder
  • 2 oz parmesan
  • 8 oz. spinach (frozen or fresh)
  • cornflakes
  1. Cook chicken with salt and pepper and cut into cubes.
  2. Mix cream cheese, monterey jack, parmesan, milk, salt, and garlic in a stand mixer.
  3. Grease the pan and cover the bottom with spinach. Add chicken and top with the sauce.
  4. Cover with tin foil. Cook at 350 degreesfor 45 minutes to an hour (or until hot all the way through). Remove foil and cover with cornflakes for the last 10 minutes of baking.

Enjoy hot over noodles. Serve with Rich’s rolls and bug juice for the full camp experience!
