Cooking with Solveig: Norwegian Waffles

One of the highlights of this crazy quarantine time? We’re all cooking a little more at home, and spending the time we wouldn’t have before to make meals from scratch. (Who all has tried their hand at bread this week?)

Example A of something you might not have taken the time to make? Waffles! This recipe is perfect for making your Easter brunch special, even if the day looks a little different this year. Try it out!

Ingredients

  • 1 qt buttermilk
  • 1 c sugar
  • 4 c flour
  • 1 stick melted butter
  • 3 t baking soda
  • 6 eggs, separated at room temperature
  • vanilla to taste
  1. Turn on waffle iron

  2. Put soda in buttermilk in large bowl or pitcher

  3. Separate eggs

  4. Beat yolks until thick and lemony looking. Add sugar slowly. Add melted butter. Add flour and buttermilk mixture alternately starting and ending with flour. Add vanilla.

  5. Beat whites stiff – fold in to batter. Cook on waffle iron.
