Bahn Mi Breakfast Bites

Salad Ingredients:

  • 2 c spiralized carrots
  • 2 c spiralized daikon radish
  • 1⁄4 c unseasoned rice vinegar
  • 1⁄4 c sugar

Sauce Ingredients:

  • 2⁄3 c mayo
  • 2 green onions, finely chopped
  • 1 T hot chili sauce (i.e. Sriracha)

Sandwich Ingredients:

  • 8 large eggs
  • 1 t fish sauce
  • 1⁄4 c finely chopped fresh basil
  • 4 large garlic cloves, minced
  • 2 green onions, finely chopped
  • 1 t freshly ground black pepper
  • 1 large Haas avocado, lightly mashed
  • 1 t kosher salt
  • 1 lb extra firm tofu, planked and pressed dry
  • 1 T sesame oil
  • 2 t fish sauce
  • Bahn Mi Bread

You can use a variety of bread for these sandwiches. Ideally you want a baguette that has a thin crispy crust so that the ingredients don’t mush out when you eat the sandwich. The bread should have quite a bit of give as well. You can try pinching out some of the bread from inside and see if that helps. Bolillo rolls work well.

At camp we used the Bakerly brand of mini brioche rolls. If you can find a Vietnamese bakery, you’re in for a treat. The bread is slightly sweet and makes this sandwich stand out.

  1. Thinly sliced jalapeno pepper Thinly sliced English cucumber and Fresh cilantro sprigs.
  2. Place planked tofu inbetween many layers of paper towel and press lightly, removing liquid. Repeat two more times and let tofu air dry.
  3. Combine spiralized carrot and daikon in a large glass bowl and toss with vinegar and sugar. Let sit for an hour, tossing every 15 minutes.
  4. Combine sauce ingredients and let meld while making sandwich.
  5. Whisk together eggs and fish sauce. Stir in basil, garlic, salt, and pepper. Spray a 10-inch nonstick fry pan over medium heat. Pour in egg mixture and gently move the cooked egg across the pan (forming a “curd”).
  6. Swirl the egg around the pan and gently lift the cooked egg up to allow the rest of the eggs to cook. Fold into thirds and remove from pan.
  7. Whisk the 1T sesame oil and 2 t fish sauce in a small bowl. Gently baste the tofu planks on both sides with the sauce. Heat the saucepan over medium high and saute the tofu until golden brown. Remove from pan and let cool. Slice planks into pieces that will fit on the bread you have selected.
  8. To assemble the sandwich, spread mashed avocado on bottom slice of bread. Spread mayo sauce on both sides of bread. Layer the cucumber and jalapeno, then tofu, then egg. Top with carrot and daikon and plenty of cilantro.
