Laura's Friday Five

I love this time of year! Here are the things I am into right now:

  • Family! I love getting to spend time with my daughters and their husbands. Right after camp, we enjoyed a great trip to the beach. This year, we caught and enjoyed eating lots of crab. We also like to run, relax, collect shells and savor our time together!
  • Dana’s music! You all love getting to hear Dana’s music after taps and so do I! When the weather gets cool enough to build a fire, Gervais and I like to push our chairs next to the hearth and turn on Dana’s music. You can enjoy Dana’s music all year too. Her albums are available from her website. My favorite albums are Above the Field a collection of Hymns and Silent Night, her Christmas album. All of her music is fantastic! She also has a Pandora station, so you can find her there too!

  • Lunch with Gervais! Now that camp is over, Gervais and I can enjoy quiet lunches together. Most people think that Gervais does all the cooking here like he does at camp, but I love cooking too. For lunch we like to sit at our little café table outside and usually have a big salad. Here is the recipe for Ginger Dressing that we use at camp. This is plenty for a family for lots of meals.

Ginger Dressing

In a Cuisinart chop:

  • 1 Onion
  • 1 Carrot
  • 1 Celery stalk
  • 1 lemon rind
  • 6 T fresh Ginger
  • 1 Garlic clove
  • 1T Sugar
  • Salt and Pepper

Add:

  • 1 ½ cups Vegetable Oil
  • ¾ cup Soy Sauce
  • ¾ cup Rice Wine Vinegar
  • 1 whole Lemon juice Enjoy!
  • The Alumnae Reunion! My favorite weekend of the year! Lots of past campers and counselors come to Greystone to laugh and sing and play! We stay in cabins, do activities and it’s all for a great cause! Proceeds from the weekend go to The Great Day Fund that provides scholarships to campers at Greystone. We love it! You can give to the Great Day Fund too! It’s a fabulous way to give back and help other girls enjoy camp!
  • Coffee! Do you know that Gervais owns a coffee roasting business? Little River Roasting is located in our hometown, Spartanburg, SC. All of the coffee we serve at camp is from Little River. We love it! Every year, Gervais travels to different counties to visit coffee farmers and helps to arrange fair deals to support the farmers and their families. Last year, he travelled to Cameroon in east Africa. This year, he is planning a trip to Peru. We are excited about great coffee year round. You can enjoy it too as we ship coffee all over the country!
