Camp Recipe: Opening Day Scones

The countdown to camp also means the countdown to Opening Day scones, a camper and parent favorite. On the first day of camp, campers quickly drop off their bags in their cabin only to race to our Opening Day reception for a taste of a hot, delicious scone. Parents bring large totes just to wrap a few up for that long drive home (not as sneaky as you thought there mom…we see you…hehehe). But who can blame them?! These scones are the BEST!

And now, you can make these famous Greystone scones at home in your very own kitchen! We twisted Gervais’ arm and got the pared-down recipe for you to make your own batch for family and friends.

Greystone Opening Day Scones

Yield: 6

Ingredients:

  • 1.5 cups Flour
  • .5 cup Sugar
  • 1 Teaspoon Salt
  • 2 Tablespoons Baking Powder
  • .5 cup Heavy Cream
  • .5 cup Sour Cream
  • .5 cup Chocolate Chips

Directions:

  1. Combine the flour, sugar, salt and baking powder in a large bowl.
  2. Add the sour cream and heavy cream.
  3. Mix everything gently by hand until it is incorporated. It should be fairly moist but not soupy at all. You can add cream or flour to get the right consistency.
  4. Find a flat surface and flour it, more than a dusting but not too much.
  5. Place the dough on the floured surface and dust the top of it with flour so it is not sticky. Press down with the palms of your hands until the dough is flat and about 2 inches thick.
  6. Cover the surface with chocolate chips and press the chips into the dough. From right to left fold half the dough over on top of the other half. Now fold the top half down on top of the bottom half.
  7. Press this out until it is about 1 inch thick and cut into what ever shape you want.
  8. Place the pieces on a baking sheet and place them into a 375º for 12 minutes or until they are golden brown on the top.
