Cooking with the Hollowells

This is the first in a series of posts about great Greystone Food! By request, I am going to share some tips on making our favorite recipes at home. So, I’ll start with the best~ Greystone Bread! (The recipe follows)

This weekend is Wofford College Homecoming (Go terriers!) Gervais and I are catering a Class Reunion Dinner and, of course, we’re including camp favorites: Camp Bread and Gervais’ Biscuits! Our main dishes will include Shrimp and Grits, Ham Biscuits and Italian Meatballs. For an appetizer, we’re serving toasted Greystone Bread with baked Goat Cheese and Marinara Sauce! It is delicious.

Some people are intimidated about making bread, but it’s so easy. Gervais measured all the ingredients into a big bowl; he mixed it by hand and then kneaded it for about 5 minutes. He let it rise while we ate dinner. After that, he cut the dough into pieces and formed them into loaves. (For camp its always round loaves, but for tonight he made skinny baguette loaves so we can slice and toast it easily) The loaves sat for about 30 minutes and then he baked them. The house was filled with the fabulous aroma of fresh bread!

Tonight, we will toast the slices and serve them on a large tray along with the Goat cheese and Marinara. (My daughters love this recipe and sometimes we eat it as a whole meal!)

Goat Cheese and Marinara
In a small baking dish, pour a few tablespoons of Olive oil. Cover the bottom with Goat Cheese about an inch deep. Top with Marinara Sauce – also about an inch deep. Bake on 325 until it is warm all the way through. Sprinkle with fresh Basil and spread on toast.

Greystone Bread
4 Cups Flour
1/4 oz packet of Active Dry Yeast
1 1/2 Cups warm water
1 T salt
olive oil

Mix water and yeast and add to the dry ingredients. Mix together and then knead 5 minutes. Place in a large bowl lightly greased with olive oil and let rise until double. Divide the dough into 2 pieces and form into loaves. Let the loaves rise again for about 30 minutes . Bake on 350 until golden brown.
